If your wife is working legally, then you can include her income in the affidavit of support. However, you still must file an affidavit of support (even if you do not meet the income requirements).

Usually it is easier and cheaper but caution: if she comes here on a visitor visa for the purpose of filing adjustment in the U.S. that is a very big problem misrepresenting her entry. However if she is already here and entered for another purpose she can do this with some restrictions. You should contact an attorney.

It is difficult to say when your petition will be reached for adjudication just by the notices that you have been receiving from USCIS. However, I can refer you to the Nebraska Service Center processing time which is now 2-7 months, and that the Center will entertain inquiries on cases in your class which were filed by 9/12/20 if the petition has not yet been reached for adjudication.
