In practical terms, the wife could try taking the husband's name off the petition but will not be able to do it without seriously hampering her own case. However, if she files for divorce, the husband will not be able to adjust status because his status as a beneficiary of the petition filed by his wife's employer is derived through this marriage.

Yes. However, this case is complicated and should be discussed in detail with an experienced immigration attorney. I would recommend her visiting you and then you proposing marriage in the US after her entry. Then wait a month or two before getting married. In the meantime, she doesn't leave the US until she gets her green card or travel permit (2 to 3 month process).
