Your EAD category is based on Deferred Action, which does not allow for adjustment of status.  DACA EAD cards are being issued fairly quickly, usually within 6-8 weeks after the fingerprint appointment.  You cannot use the I-765 to apply for anything other than a work permit.

You need to make an appointment with a competent immigration attorney to fully discuss the risks and the benefits of such a choice. Your mother is not legally allowed to remain in the US past the I-94 date regardless of the visa's length. She may be eligible to change status to another category which would then keep her in status. It may be possible for her to remain in the US and still adjust status but there are a lot of risks there and it is not allowed under law. For this reason, please make that appointment.

Only permanent residents and US citizens can sponsor an individual for financial support on form I-864 when the individual applies for permanent residence. I suggest that under the circumstances you would have to have a cosponsor's affidavit of support from a friend or relative. The affidavit of support of course would have to be credible.
