As an adopted grandchild and the passing of my grandmother, I need to know how long it will take for her will to be read, and will I be notified?

There generally is no reading of the Will. This is largely a Hollywood invention. You would be notified if you are an heir or beneficiary under the Will. It is not clear from your summary if that is the case. You would be able to get a copy of the Will from the probate court, one way or another, once it has been filed.

Obtain your self a probate/trust litigation attorney to represent you, if you do not already have one, to compel an accounting of the trust assets, income and expenses, and determine your responsibility re rents for property you apparently occupy.

Can a codicil be admitted without the will it references?

That's an interesting question. Never seen that before. What courts do is try to figure out what the testator intended, even if there are technical or other problems with a will. The best approach, if possible, would be to have all of those persons affected by the will(s) get together and try to come to an agreement on what the intent was. Otherwise, it may end up as a payday for a bunch of lawyers.
