Do I have to prove detailed arrest information to an employer?

Yes, you are legally required to provide it. In any employment situation, the employer has control of the employee on matters that are related to work. I do not know the reasons or the motive for the employer asking for the details of your arrest and conviction records, but I presume that they are related to your work somehow. The employer has an interest in having a sane, sober and sound employee who is productive. If you fail to provide them, the employer can take disciplinary action against you. You cannot assert the right of privacy or 5th amendment privilege either because you have been convicted and those records are a matter of publc records now. Good luck.

Is it possible to have my classes/community service transferred to another state?

CA DMV generally accepts no other state's classes. You can contact them and see if you can get a special waiver and approval for classes in the other state. You'll have to do the community service here, unless you return to court and obtain a court ordered change of probation terms to allow it elsewhere. If you decide to hire counsel for that, contact me. You can move out of state unless your sentencing and probation terms specifically prohibit it.

Well, because there are too many people like you: people getting arrested and charged with crimes.  It crowds the courts. Covid made it worse. The good news is there's nothing you can do about it, so there's no need to worry.
