In general, unless an employee is civil service, in a union, or has a written employment contract, they are an 'at will' employee that can be disciplined or terminated any time for any reason, with or without cause explanation or notice.

Your lawyer can tell you whether the jurisdiction where your case is will even consider an early termination of probation, most don't, except under the most extreme circumstances. At the very least, you should have completed your sentence, paid the fines, done the jail if any, completed the DUI school. If you didn't use a DUI lawyer for the case you should consider using one to help with this process, it usually requires motions and hearings where matters of substantive law are at issue.

Police can arrest you or briefly detain you for a traffic stop without having to read you your Miranda rights. Police don't have to read you your Miranda rights unless they want to question you while you're in police custody and then use that testimony against you in court. Police officers can search your outer clothing (a "pat-down" search) if they believe you may be armed.
