Her son should file for her. You can be a co-sponsor if the son does not have enough income, but he should be the petitioner for his mom.

If you entered without inspection, it is very likely that you will have to leave the county to get your visa when you get married to a United States citizen. Unless you meet certain small exceptions such as 245i eligible, married to a active U.S. military or veteran. However if you came on a visa and simply overstayed you can adjust without leaving the country. Also you will need to apply and be approved for a I-601A waiver before you leave to get your visa. I highly suggest you work with an attorney to guide you through this process as it is by no means a cake walk.
