Generally, once you are out of status, you may not change or extend your status in the US. You may consider leaving the US and to apply for F-1 visa in your home country. Depending on the length of your overstay in the US and other?circumstances, you may have hard time in getting your F-1 visa.

If you are married, you either file for the immigrant visa or the K-3 to enter the US to apply for adjustment of status. As your US citizen wife will be lawfully residing in Australia (I presume), the US consulate there should have jurisdiction to accept a direct filing of the I-130 relative petition. Contact the consulate or embassy directly to confirm she can file there. If not, she files it with the USCIS in the US.

A letter of invitation to come viist the US may be ignored by the consulate, your son's grandparents have to demonstrate that they have reasons to return to Mexico, children, grandchildren, property, bank accounts, assets, etc. Otherwise, it is feared that the foreigner will get a visa to visit their family and just stay with the family.
