The arrest will need to be disclosed - if you did not include it on your I-485 then be sure to tell the Officer about it at the interview and bring certified court records with you to the interview showing that no charges were filed. If you don't' have an immigration attorney I suggest you get one to present this properly. Proxy marriage are not accepted by USCIS unless the marriage was consummated per INA Section 101(a)(35). If that is not possible, then you should not get married, but instead petition her by filing an Fiance petition and have her apply for a K-1 visa. Once here, then you get married.
