The probate court has information available about your duties. You should contact one of the representatives at the court that appointed you and ask them for an instruction sheet. If they don't have one available they should be able to direct you how to get the information you need.

My practice is to leave each child 100 dollars, which shows that you thought about them when planning your estate. Or you could mention each one and specifically disinherit each child. You have to be very specific as to your intentions.

In Texas people can leave their things to whomever they wish.  You might consider contesting the Will if you have evidence tending to prove fraud, lack of legal capacity or undue influence.  Your description indicates none of these.  The last two can be very difficult to prove.  A Will contest can cost as much or more than you might inherit with no guaranty that you will win.
