Life insurance policies pay to the named beneficiaries. If you have specific reasons to do so you can make the insurance subject to the will by making your personal representative (as such) the beneficiary, but this is usually not useful.

If she quit claim deeds the house to you alone, to the detriment of your siblings, be aware that this could create a Will challenge down the line.

At the time she gave it to you, I assume it was a gift. She relinquished her right to the property at that time. Years later, it is highly doubtful that the court would find in her favor, and return it to her. It's your ring.
