Hire a lawyer to try to get the DA to drop the case. I did this a couple of years ago on a 40 year old warrant.

You will not be able to get the video until the DA turns it over as part of discovery during the case.

Do I expect a plea or can I fight the DUI charges?

Yes you can fight the charges, the car stop, the blood draw. You are eligible for conditional driving privileges (work, school, childcare, medical/dental for you and members of your family). Since the DA is playing hardball you can too. You don't have to prove anything. The People have to prove you guilty beyond a reasonable doubt.
