If you are under the influence or alcohol or drugs, then yes, you can be charged with DUI. If, as you say, it is because you "drove erratically because you had to pee because you drank to much water", you can still be charged with negligent driving or reckless driving.

For driver positions, sure. Im surprised they hired you. Their insurance would generally prohibit hiring anyone with a poor driving record.

Can they impound my car since I have never had a DWI and was not with my girlfriend at the time?

No. They can only impound the vehicle if owned by person getting DUI. If they do impound you can get it back with registration and valid drivers license.
