If a DUI conviction was appealed and won, meaning overturned, will it be listed on a criminal conviction search. This happened in 1979

Congratulations. There are many miscarriages of justice perpetrated in the courts of original jurisdiction that go uncorrected because people don't have the resources, time and fortitude to have their cases reviewed by an appellate court. To answer your question, a reversal of your conviction on appeal is tantamount to an adjudication of not guilty by a jury of your peers and no conviction should be on your record. If the State of New Jersey fails to remove the conviction from your record, you should get a Court order expunging the conviction

How much jail time am I looking at for a first time offense of an extreme DUI being 20 years old with a clean record?

I don't recognize the term "extreme DUI" as having a specific legal meaning in Texas, but if there was no accident and excessive speed is the only issue, maybe no jail time. Plus, if you'll make sure this is your ONLY offense (and specifically your only alcohol offense, you can eventually get it expunged from your record under a not-too-well-known provision of the Texas Alcoholic Beverages Code.

What can I do if my tickets are not in the system?

You will find out Sept 6 what happened to the DUI. If it's not there, there's not much you can do except tell the DMV.
