In Georgia, cops can rely on circumstantial evidence to show you were driving, and of course your admissions.  Things like witnesses, the warmth of the car engine and your proximity to the vehicle can all be investigated to try to show you were DUI.  If you were in custody when you made the statements to the cop, he would have needed to read you Miranda before questioning you.  However, just because you are pulled over does not mean you are in custody.  It is a case-by-case determination.

What could happen to his driver’s license and in court if he now was in a minor accident and they found a cooler with open containers in his trunk?

What is your question? Are you concerned about his driver's license being revoked or the fact that he is an alcoholic and may harm your children, because it makes no sense to be concerned about both. If he cannot reach the alcohol in his truck and he was not impaired, the accident will not impact anything. IF he could reach the alcohol, or he had alcohol on his breath, then he may have a problem.
