It is recommended that you and your wife agree to a visitation schedule before filing. You may ask the clerk's office if there is a standard visitation schedule in your county. The judge may be willing to propose a schedule, but they usually expect the parties to have that worked out beforehand and a written parenting plan prepared. Hiring a lawyer will make the process a lot smoother.

It is still possible, you will have to have an order for substitute service. You are not the first person with a disappearing spouse.

What can I do if my wife was given the house in our divorce and she is not making payments and its hurting my credit?

You could make the payments. You could write all of the credit reporting agencies and provide a copy of the divorce decree and show that she is the sole obligor on the house (which isn't quite true, because you are still obligated on the note), or perhaps you could go back to court and ask for the court to order her to sell the house.
