What can I do to my criminal background to make it not show.

The request to "clean up" or erase one's criminal record is generally limited to the process of expungment or making a request of the governor of your state for a pardon. Expungment usually are limited to charges that were dismissed because the evidence could not support a conviction. Old convictions must be addressed by a pardon.

Can I charge my wife with theft if she sold something of mine without my permission?

You will probably have a very hard time getting your county prosecutor to bring a prosecution unless she is your ex-wife and you were awarded the property in at divorce judgment. Sounds like you marriage is at an end, I would suggest you see and attorney before more of your property disappears and things escalate.

Do I have to go through a process to have my record expunged or does it happen automatically after probation is complete?

It is not automatic. You need to file a motion before the court that convicted you. Your constitutional rights are also not automatically restored.
