Why is it that my Chapter 7 was discharged of debt but still open?

A bankruptcy can remain open for a period of two years, until it is finally closed. I do not practice law in Michigan but noticed that you put the state as Florida. If you are not pleased with the services of your attorney, perhaps you should consult with another.

Can I stop paying my debt just until I have my court date?

If you want to retain your car, it is important that you keep making the proper payments. If you stop paying, it is likely the lender will ask the court for relief from the automatic stay so they can come and repossess the car. However, other debt like credit cards, etc., that you are not keeping, you can stop paying.

What can I do to stop credit card collectors and judgements?

You should consult a bankruptcy attorney to evaluate whether bankruptcy is the best option now. I would not be concerned about the credit issue since you cannot pay your debt.
